I never watch The Food Network, but I happened to stubble across an older episode of The Barefoot Contessa. Ina was exploring Brooklyn and all the delicious offerings. She ended up making this snap pea salad that (of course) looked amazing. I have made it a few time since and it is so incredibly easy and yummy. I modify the recipe a little to my taste buds and what I already have in the pantry.
I rarely purchase pancetta, but I do often have prosciutto for the occasional charcuterie board. I just roughly rip the prosciutto in strips and throw them on baking sheet. Bake for about 10 mins. I also only use about half of the amount of dressing. It gets a little too oily in my book.
Overall, this is a super simple recipe. I even ate it as my lunch, it’s not just a side.
